What's on your menu for Thanksgiving this year? Let me guess...turkey? How about giving it a Moroccan twist this year? With just a few spices, you can turn your turkey from same old, same old into something special.
My darling friend George, the dancing dentist, threw a little Thanksgiving fete early this year when I was in town, and a number of Morocco lovers happened to be around the table. In celebration, George served up a divine Moroccan turkey. Here is his recipe:
In a small bowl add 2 spoon fulls each of cinnamon and ginger (powder), and one spoon full each of turmeric and cardamom. Add a little salt and pepper to the mixture. Then stir in a cup or so of olive oil. Rub the mixture over and under the skin. In the cavity stuff orange and tangerine quarters and shallots tossed with some of the oil mixture. Brush the turkey frequently with the oil combo while cooking. Enjoy!
So easy and the same recipe can be used for chicken, with quantities scaled down appropriately. George also prepared THE MOST delicious Moroccan side dish made with simmered dates, apricots, and raisins. Let me know if you would like me to share the recipe.
